Kilchoman Distillery on the island of Islay in Scotland is one of the Yungest, and smallest, single malt operations in the entire area. It is also the first to be built in Islay in 124 years. Machir Bay is a vatting of three, four and five year old whiskies, matured in fresh bourbon barrels and finished in oloroso sherry butts for eight weeks. Since it is the distillerys first general offering, plans are in place each year to add more mature malt to the mix. The barley for its single malt Scotch is grown in part there at the farm/distillery, being part of a process this is said to create a 100 percent Islay single malt whiskey from barley to bottling.
